I thought I had explored everything the island had to offer, but I was recently surprised to learn that there is a wine appreciation course offered on the island! Anyhoo, it was almost late in the afternoon when a group of friends and I arrived at the wine appreciation course so eager to learn more about wine. (Well, I’m just here for the drinks, lol, just kidding! šŸ˜… I don’t know anything about wine, really. That’s why I’m so excited to learn about it in this short course.)

The course is led by Sir Michael Sandalo, the passionate owner of Sandalo Vineyards. Sir Michael knows a lot about wine. He was just a regular wine enthusiast who met a winemaker while posted in Brazil as a corporate expat during his professional career. He brought those learnings back to the island and incorporated them into his business. He loves sharing his knowledge, and he also has a great sense of humor, so the course is both informative and entertaining. 😊

Sir Michael greeted us and welcomed us to the course. He explained that the management of Sandalo Vineyards had requested specific flavors that were familiar to Filipino tastes, and that the winemaker in Brazil was to pursue and produce those flavors. He described the flavors as appealing and smooth on the palate, with fruit-forward tastes and a well-rounded mouthfeel. Sir Michael began the course by discussing the history of his wine business. He explained the different flavors and aromas that each grape variety can contribute to wine. He also talked about the winemaking process, from harvesting the grapes to bottling. šŸ·

My favorite part of the course was the wine tasting. hehe! šŸ˜…šŸ’… Sir Michael poured us a variety of red and white wines. He also gave us some tips on how to experience distinctive notes produced by each specific wine. He explained to us the FIVE S (5-S) of wine tasting.

Here are the five steps of wine tasting, as explained by Sir Michael:

  1. See. Look at the wine’s color and clarity. This can give you clues about the type of wine and its age.
  2. Swirl. Swirl the wine in your glass to release its aromas.
  3. Sniff/Smell. Take a deep breath and inhale the wine’s aromas. This will help you identify the different flavors.
  4. Sip. Take a small sip of the wine and let it linger on your tongue. This will allow you to taste the different flavors.
  5. Savor. Enjoy the wines’ unique flavors and characteristic taste while indulging your palate.

I would definitely recommend the wine appreciation course to anyone who is interested in learning more about wine or who wants to experience something unique on Bantayan Island.   1. I do think that I need this for my current job. Haha. I used to have a sensitive stomach that even a glass of cola will trigger reflux. Pero ngayon ang daming ganap at ang daming socials. Kailangan kong matuto uminom ng wine and other drinks.

  3. For such a relatively small island Bantayan Island has a lot to offer. When we did wine tasting in Paris my oldest son refused to taste the wine (he was 20 something and could drink). The presenter asked him why, and he said I only drink beer. The presenter called him a barbarian. It was mostly just funny. I certainly taste wine.
